Rice:
- 2 cups cooked jasmine rice (cold & day-old)
Green Onion:
- 1 green onion, finely chopped
Soy Sauce Mixture:
- 2.5 tbsp regular soy sauce (or light soy sauce)
- 1/2 tbsp sesame oil
Eggs:
- 4 large eggs, beaten
Vegetable Oil:
- 2 tbsp vegetable oil (or any neutral oil)
Instructions
- Heat Oil: Heat vegetable oil in a large pan or wok until smoking (if using a wok).
- Stir-fry Eggs: Pour in beaten eggs and stir-fry until they take shape but are still moist.
- Add Rice: Quickly toss in rice, breaking apart any clumps if necessary.
- Combine Ingredients: Push everything to the side of the pan, add more oil, cook green onions, and mix into rice and eggs.
- Season and Finish: Add soy sauce and sesame oil around the edges of the pan, toss until grains are browned. Remove from heat and serve hot.
Notes
- This recipe works best with day-old rice as it fries up better and is less sticky.
- You can customize this fried rice by adding vegetables, protein, or your favorite seasonings.
