Green Onion:

  • 1 green onion, finely chopped

Soy Sauce Mixture:

  • 2.5 tbsp regular soy sauce (or light soy sauce)
  • 1/2 tbsp sesame oil

Eggs:

  • 4 large eggs, beaten

Vegetable Oil:

  • 2 tbsp vegetable oil (or any neutral oil)

Instructions

  1. Heat Oil: Heat vegetable oil in a large pan or wok until smoking (if using a wok).
  2. Stir-fry Eggs: Pour in beaten eggs and stir-fry until they take shape but are still moist.
  3. Add Rice: Quickly toss in rice, breaking apart any clumps if necessary.
  4. Combine Ingredients: Push everything to the side of the pan, add more oil, cook green onions, and mix into rice and eggs.
  5. Season and Finish: Add soy sauce and sesame oil around the edges of the pan, toss until grains are browned. Remove from heat and serve hot.

Notes

  • This recipe works best with day-old rice as it fries up better and is less sticky.
