  • ½ Yellow Onion
  • 2 Garlic Cloves
  • 6 oz Canned Tomato Paste
  • ½ Cup Heavy Cream
  • ½ Cup Reserved Pasta Water
  • 1 Tbsp Dehydrated Basil (or 3 Tbsp Fresh)
  • 2 Tbsp Olive Oil
  • Salt and Pepper to Taste
  • Optional Topping:

  • ½ Cup Grated Parmesan

Instructions

  1. Boil the Pasta: Boil rigatoni or penne according to package instructions in salted water.
  2. Reserve Pasta Water: Before draining, reserve ½ cup of pasta water.
  3. Prepare Sauce: Dice onions, mince garlic. Heat olive oil in a skillet, sauté onions, add garlic, then tomato paste.
  4. Add Cream: Pour in reserved pasta water, add cream, season with salt, pepper, and basil.
  5. Combine: Toss cooked pasta in the sauce until well coated and heated through.
  6. Serve: Sprinkle with Parmesan and enjoy!
