Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with non-stick spray or use a silicone muffin mold to prevent sticking.
  2. Mix eggs and cheeses: In a blender or large bowl, combine eggs, cottage cheese, shredded cheese, garlic powder, onion powder, salt, and black pepper. Blend or whisk until smooth and well incorporated.
  3. Add vegetables: Fold in the chopped spinach and diced red bell pepper. Stir gently to distribute evenly throughout the mixture.
