  • 1/4 cup shredded unsweetened coconut
  • 1/3 cup coconut butter
  • 1012 roasted almonds

  • 1/2 cup dark chocolate chips
  • 1/2 tablespoon unrefined coconut oil

Instructions

  1. Prepare Dates: Slice each date open lengthwise and carefully remove the pits. Set the pitted dates aside for stuffing.
  2. Make Coconut Filling: In a small mixing bowl, combine the coconut butter and shredded unsweetened coconut. If the coconut butter is solidified, soften it in the microwave until it has a creamy, icing-like texture. Mix thoroughly until well incorporated.
  3. Stuff Dates: Using about 1/2 tablespoon of the coconut mixture for each date, fill the cavity of each pitted date. Press one roasted almond gently into the center of the coconut filling inside each date.
  4. Melt Chocolate: In a small saucepan, gently heat the dark chocolate chips together with the coconut oil over low heat, stirring frequently, until the mixture is smooth and fully melted.
  5. Dip Stuffed Dates: Carefully dip each stuffed date into the melted chocolate, ensuring it is fully coated. Use a fork or skewer to lift each date out, letting excess chocolate drip off.
  6. Chill to Set: Place the chocolate-coated dates on a parchment-lined tray or plate and transfer to the freezer. Chill for about 10 minutes until the chocolate hardens and sets.

  • Use Joolies dates or any soft, large medjool dates for best results.
  • If coconut butter is too hard, warming slightly ensures easier mixing.
