- 10–12 Joolies dates
- 1/4 cup shredded unsweetened coconut
- 1/3 cup coconut butter
- 10–12 roasted almonds
Chocolate Coating
- 1/2 cup dark chocolate chips
- 1/2 tablespoon unrefined coconut oil
Instructions
- Prepare Dates: Slice each date open lengthwise and carefully remove the pits. Set the pitted dates aside for stuffing.
- Make Coconut Filling: In a small mixing bowl, combine the coconut butter and shredded unsweetened coconut. If the coconut butter is solidified, soften it in the microwave until it has a creamy, icing-like texture. Mix thoroughly until well incorporated.
- Stuff Dates: Using about 1/2 tablespoon of the coconut mixture for each date, fill the cavity of each pitted date. Press one roasted almond gently into the center of the coconut filling inside each date.
- Melt Chocolate: In a small saucepan, gently heat the dark chocolate chips together with the coconut oil over low heat, stirring frequently, until the mixture is smooth and fully melted.
- Dip Stuffed Dates: Carefully dip each stuffed date into the melted chocolate, ensuring it is fully coated. Use a fork or skewer to lift each date out, letting excess chocolate drip off.
- Chill to Set: Place the chocolate-coated dates on a parchment-lined tray or plate and transfer to the freezer. Chill for about 10 minutes until the chocolate hardens and sets.
Notes
- Use Joolies dates or any soft, large medjool dates for best results.
- If coconut butter is too hard, warming slightly ensures easier mixing.
- Dark chocolate with at least 70% cocoa is recommended for a rich flavor.
- These treats are best stored in the refrigerator or freezer to keep the chocolate firm.
- For a nut-free version, substitute almonds with roasted pumpkin seeds or omit altogether.
