For the Red Velvet Brownie Layer:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 teaspoon white vinegar
- 2 large eggs
- 3/4 cup all-purpose flour
- Pinch of salt
For the Cheesecake Layer:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
Instructions
- Step 1: Preheat & Prep – Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper or grease it.
- Step 2: Make the Brownie Batter – Whisk together melted butter, sugar, cocoa powder, food coloring, vanilla, vinegar. Add eggs, then stir in flour and salt. Spread most of the batter in the pan, reserving some for swirling.
- Step 3: Make the Cheesecake Layer – Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Step 4: Assemble & Swirl – Pour cheesecake mixture over brownie batter, then swirl in reserved brownie batter using a toothpick or knife.
- Step 5: Bake – Bake for 30–35 minutes until edges are set and center is slightly jiggly. Cool completely before slicing.

- Chilling the brownies in the fridge before slicing can help achieve cleaner cuts.
