Tortillas:
- 4 flour tortillas
Filling:
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for frying)
Instructions
- Combine Ingredients: In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper. Stir until well mixed.
- Fill Tortillas: Lay one tortilla flat. Place one-fourth of the filling mixture onto half of the tortilla.
- Fold Tortillas: Fold the tortilla over to cover the filling.
- Cook Quesadillas: Heat a large skillet or griddle over medium heat. Add olive oil and heat. Place the filled tortilla in the pan and cook for 3-4 minutes per side, pressing gently with a spatula to ensure even melting and browning.
- Serve: Remove from heat, let it cool slightly, then slice into wedges and serve.
