- 1 cup (240g) Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup (150g) packed brown sugar
Additional Ingredient:
- 1 ½ cups peeled and diced apples (about 2 medium apples)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Mix dry ingredients: In a large bowl, whisk together flour, cinnamon, baking powder, and salt.
- Combine wet ingredients: In another bowl, mix Greek yogurt, brown sugar, eggs, and vanilla until smooth.
- Blend wet and dry mixtures: Pour wet mixture into dry ingredients, fold gently, then mix in diced apples.
- Fill muffin tin: Scoop batter into muffin tin, filling each cup ¾ full.
- Bake: Bake for 18-22 minutes until a toothpick comes out clean.
- Cool: Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can sprinkle a little cinnamon and sugar on top of the muffins before baking for extra flavor.
