Description

Deliciously crispy and fluffy apple fritters made with fresh Granny Smith apples, coated in a sweet cinnamon batter, fried to golden perfection, and optionally glazed with a sweet vanilla sugar glaze. Perfect as a cozy treat or breakfast delight.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 1/4 teaspoons salt

Wet Ingredients

  • 2 large eggs
  • 3/4 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 2 Granny Smith apples, peeled and diced

Glaze (Optional)

  • 1 1/2 cups powdered sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 3 tablespoons whole milk

For Frying

  • Canola oil (about 2 inches deep in pot)

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt. Stir well to distribute all the dry ingredients evenly.
  2. Mix Wet Ingredients: In a separate bowl, lightly beat the two large eggs with a fork, then whisk in the whole milk, melted unsalted butter, and vanilla extract until the mixture is smooth and uniform.
  3. Combine and Add Apples: Gently fold the wet ingredients into the dry ingredients just until combined. Be careful not to overmix to maintain lightness. Fold in the peeled and diced Granny Smith apples evenly throughout the batter.
  4. Heat Oil for Frying: Pour canola oil into a Dutch oven or deep frying pan to about 2 inches deep and heat over medium heat. Use a thermometer to maintain the oil temperature around 350°F. Test readiness by dropping a small drop of batter into the oil; if it sizzles and rises quickly without burning, the oil is ready.
  5. Fry the Fritters: Drop tablespoon-sized portions of batter into the hot oil, frying 6 to 8 at a time without overcrowding. They might flip on their own; if not, carefully flip them manually. Fry until golden brown on both sides and cooked through, approximately 2 to 2 1/2 minutes total. Remove fritters and drain on paper towels to remove excess oil. Repeat until all batter is used.
  6. Prepare Optional Glaze: In a medium bowl, whisk together the powdered sugar, salt, vanilla extract, and whole milk until the glaze is smooth and slightly runny.
  7. Serve: Dust the warm fritters generously with powdered sugar or dip them in the vanilla glaze before serving. Enjoy while warm for the best flavor and texture.

Notes

  • Ensure oil temperature remains steady at 350°F to avoid greasy or undercooked fritters.
  • Do not overmix the batter; lumps are okay for light texture.
  • Use Granny Smith apples for their tartness and firmness which hold well during frying.
  • Glazing is optional; frosting with powdered sugar gives a classic finish.
  • Drain fritters well on paper towels to reduce excess oil before serving.
  • Leftover fritters can be reheated briefly in an oven to maintain crispiness.
