Instructions

  1. Prepare Asian sauce: In a bowl, combine tamari, brown sugar, minced garlic, ginger, and rice vinegar. Whisk all ingredients thoroughly until the sugar dissolves. Set aside to allow flavors to meld.
  2. Cook snow peas: Bring a medium pan of water to a boil. Add snow peas and boil for 5 minutes until just tender-crisp. Drain and set aside to keep warm.
  3. Sauté mushrooms: Heat a large skillet over high heat until hot. Add 2 tablespoons of olive oil; it should sizzle immediately. Add the sliced mushrooms and cook on high heat, stirring occasionally, until they are evenly browned. Lightly salt the mushrooms midway through cooking. Once done, transfer to a bowl and set aside.
  4. Sear the beef: In the same skillet, add the remaining 2 tablespoons olive oil over high heat until it sizzles. Add thinly sliced beef in a single layer without overcrowding; it may be necessary to cook in two batches to ensure proper browning. Cook on one side until it develops a nice brown crust, then flip and cook the other side until browned. Remove the seared beef to a bowl. Repeat with the second batch of beef.
  5. Combine and finish cooking: Return all cooked beef slices to the skillet. Add the cooked snow peas, browned mushrooms, and the pre-made Asian sauce. Stir vigorously to combine everything well and cook on high heat for about 1 minute to let flavors meld and everything heat through. Turn off the heat, cover the skillet with a lid, and let sit briefly before serving.
