Instructions

- Cook snow peas: Bring a medium pan of water to a boil. Add snow peas and boil for 5 minutes until just tender-crisp. Drain and set aside to keep warm.
- Sauté mushrooms: Heat a large skillet over high heat until hot. Add 2 tablespoons of olive oil; it should sizzle immediately. Add the sliced mushrooms and cook on high heat, stirring occasionally, until they are evenly browned. Lightly salt the mushrooms midway through cooking. Once done, transfer to a bowl and set aside.
- Sear the beef: In the same skillet, add the remaining 2 tablespoons olive oil over high heat until it sizzles.
