Ingredients
Scale
Salmon
- 2 fillets Salmon (Lachsfilet)
- Salt, to taste
- Pepper, to taste
- 1 tbsp Olive Oil (Olivenöl)
Spinach Mixture
- 300 g Spinach (Blattspinat), thawed and drained
- 1 Onion (Zwiebel), sliced
- 2 cloves Garlic (Knoblauch), minced
- 200 g Sour Cream (Sauerrahm)
Topping
- 150 g Mozzarella
Instructions
- Sauté Onions and Garlic: In a skillet over medium heat, heat 1 tablespoon of olive oil until shimmering. Add sliced onions and sauté for 3-4 minutes, stirring frequently until translucent. Add minced garlic and cook for another 30 seconds until fragrant.
- Cook Spinach Mixture: Add thawed and drained spinach to the skillet. Stir gently and cook for 2-3 minutes until heated through and moisture evaporates. Season with salt and pepper to taste. Remove from heat and stir in sour cream until creamy and well combined.
- Preheat Oven and Prepare Salmon: Preheat oven to 175°C (347°F). Season salmon fillets generously with salt and pepper. In a separate pan over medium heat, sear salmon for about 2 minutes on each side to lock in moisture.
- Assemble in Baking Dish: Grease a baking dish and place salmon skin-side down. Spread the creamy spinach mixture evenly over the salmon. Top with a generous layer of mozzarella cheese.
- Bake: Bake in the preheated oven for 15-20 minutes until the salmon is opaque and flakes easily, and the mozzarella is golden and bubbly.
- Rest and Serve: Remove from oven and let rest for a couple of minutes. Serve the baked salmon with creamy spinach and melted mozzarella on top for a delightful meal.
Notes
- Ensure the spinach is well-drained to avoid excess moisture in the baking dish.
- For extra flavor, you can add a squeeze of lemon juice over salmon before serving.
- Substitute sour cream with Greek yogurt for a tangier taste and slightly lighter dish.
- Mozzarella can be replaced with Parmesan or Gruyère for a different cheesy note.
- Serve with crusty bread or a side of roasted potatoes for a complete meal.
