Description

Bam Bam Pomegranate Jam is a flavorful and spicy homemade jam combining the tartness of fresh pomegranate juice and mashed raspberries with a kick from chili powder and flakes. Sweetened with sugar and thickened with low sugar Sure-Jell, this jam is perfect for adding a vibrant, zesty twist to your toast, desserts, or cheese boards.

  • 3 1/2 cups pomegranate juice
  • 1 cup mashed raspberries

  • 1/2 tsp chili flakes
  • 1/4 tsp salt

Preserving Ingredients

  • 4 cups sugar
  • 1.75 oz low sugar Sure-Jell (pink package)

Optional

  • 1 teaspoon butter (to prevent foaming)

Instructions

  1. Juice the pomegranates: Extract juice from approximately three pomegranates until you have exactly 3 1/2 cups of fresh juice.
  2. Prepare the raspberries: Wash the raspberries thoroughly and mash them well to yield exactly 1 cup.
  3. Sterilize the jars: Place jars, rings, and lids into a pan filled with water, bring to a boil and boil for three minutes. Keep warm until ready to use.
  4. Combine ingredients: In a heavy stock pot, mix the pomegranate juice, mashed raspberries, chili powder, chili flakes, salt, and butter if using. Stir well to combine all ingredients.
  5. Add pectin mixture: Mix 1/4 cup of sugar with the Low Sugar Sure-Jell and sprinkle this blend into the fruit mixture. Stir thoroughly and set pot on high heat.
  6. Bring to a hard boil: Stir constantly and bring the mixture to a hard boil, which means a boil that cannot be stirred down.
  7. Add remaining sugar: Once at a hard boil, add the remaining sugar while continuing to stir constantly.
  8. Boil for one minute: Return mixture to a hard boil and maintain it for exactly one minute. Use a timer to ensure precise timing.
  9. Fill jars: Remove the pot from heat and immediately ladle the hot jam into the sterilized jars. Seal with lids and screw the rings tightly.
  10. Process jars: Process the filled jars in a boiling water bath for 10 minutes to secure the seal.
  11. Distribute raspberry seeds (optional): Since raspberry seeds rise to the top, flip jars upside down every 20 minutes for about one hour as the jam sets to distribute seeds evenly throughout the jar.
  12. Storage and yield: This recipe yields 6-7 jars of 8 ounces each, perfect for gift-giving or home use.

  • Using butter is optional but helps prevent foaming during cooking.
  • Ensure to use the pink ‘low sugar’ Sure-Jell package for proper gelling and sweetness balance.
  • Do not stir the jam down when it is at a hard boil to ensure proper thickening.
