Deliciously moist and naturally sweetened Banana Bread Donuts made with mashed bananas and maple syrup, perfect for a healthy snack or breakfast treat. These baked donuts combine the comforting flavor of banana bread with the fun shape of a donut, using simple ingredients and a quick baking method.
Ingredients
Scale
Wet Ingredients
- 2/3 cup mashed banana
- 3 tbsp pure maple syrup (or honey)
- 2 tbsp oil (or water)
- 1/2 tsp pure vanilla extract (optional)
Dry Ingredients
- 1 cup flour (white, spelt, oat, or gluten-free all-purpose)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Prepare the wet ingredients: In a large bowl, whisk together the mashed banana, pure maple syrup (or honey), oil (or water), and vanilla extract if using, until fully combined and smooth.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt to evenly distribute the leavening and salt through the flour.
- Combine wet and dry: Stir the dry ingredients into the wet ingredients until just combined to form a smooth, thick donut batter; avoid overmixing to keep the donuts tender.
- Prepare pan and preheat oven: Lightly grease a donut pan or mini muffin tin to prevent sticking. Preheat your oven to 350°F (175°C) to ensure even baking.
- Fill the pan: Spoon the batter into the prepared pan, smoothing the tops for an even shape, filling each cavity about three-quarters full.
- Bake the donuts: Bake in the preheated oven for approximately 8 minutes, or until the donuts rise and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
- Cool and remove: Allow the donuts to cool in the pan for a few minutes, then gently pop them out and place on a wire rack to cool completely.
- Optional icing: Once cooled, add your preferred glaze or frosting such as cinnamon cream cheese frosting for extra flavor and indulgence.
Notes
- This recipe works well with white, spelt, oat, or Bob’s gluten-free all-purpose flour, but almond or whole wheat flour has not been tested and may alter texture.
- You can substitute maple syrup with honey for natural sweetness.
- Use oil or water depending on your preference for added fat or a lower-fat version.
- Donuts are best eaten fresh but can be stored in an airtight container at room temperature for 2 days.
- For a dairy-free option, ensure no cream cheese frosting is used or substitute with a vegan frosting.
