Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce

  • 1 teaspoon rice vinegar

Instructions

  1. Prepare Bang Bang Sauce: In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar together until smooth. Set aside for later use to coat the fried rice.
  2. Cook Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add diced chicken, season with salt and pepper to taste, and cook for 5–6 minutes until the chicken is browned and fully cooked through. Remove chicken from pan and set aside.
  3. Scramble Eggs: Using the same pan, pour in the beaten eggs and scramble until just set. Avoid overcooking. Remove eggs from pan and set aside with the chicken.
  4. Sauté Vegetables: Add a little more oil if needed, then sauté diced carrots and minced garlic for 2–3 minutes until softened and fragrant. Stir in green peas and cook for an additional minute to warm them through.
  5. Fry Rice: Add the cold cooked rice to the pan with the vegetables. Stir-fry on high heat for 3–4 minutes, breaking up any clumps and letting the rice crisp slightly to enhance texture and flavor.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan. Stir everything together well to evenly distribute ingredients.
  7. Season and Coat: Pour the prepared bang bang sauce over the rice mixture. Add 2 to 3 tablespoons of soy sauce and mix thoroughly until the entire dish is well coated and heated through.
  8. Garnish and Serve: Remove from heat and garnish with sliced green onions. Serve immediately while hot.

  • Using day-old rice is ideal as it prevents the fried rice from becoming mushy.
