Instructions
- Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and set it aside for later use.
- Dry mixture: In a small bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined. Set this mixture aside.
- Wet mixture: In a large mixing bowl, use a hand mixer or a whisk to blend the melted unsalted butter and granulated sugar until combined smoothly. Then, add the large egg and clear vanilla extract, whisking until fully incorporated.
- Combine dry and wet mixtures: Gradually add the flour mixture to the wet ingredients and mix until nearly combined. Fold in the roughly chopped white chocolate and rainbow sprinkles with a spatula to avoid overmixing and ensure an even distribution.
- Scoop cookie dough: Use a cookie scooper to portion out dough balls. Place each dough ball onto the lined baking sheet, making sure to leave about 2 inches of space between cookies to allow for spreading.
- Bake: Bake the cookies for approximately 11 to 12 minutes until the edges are set but the centers remain very soft. In the last 2 minutes of baking, press extra chunks of white chocolate on top of each cookie and sprinkle some more rainbow sprinkles for decoration.
- Let cool: Once baked, you can optionally use a round cookie cutter slightly larger than your cookies to swirl around and push in uneven edges, creating perfect rounds. Let the cookies cool on the baking sheet for about 10 minutes until firm enough to move, then transfer to a wire rack to cool completely.
