Description
A comforting and hearty Biscuits and Gravy Casserole featuring savory ground pork sausage smothered in creamy homemade sausage gravy and topped with golden, flaky biscuit pieces baked to perfection. This easy-to-make casserole is perfect for a satisfying breakfast or brunch.
Ingredients
Scale
Sausage and Gravy
- 1 pound ground pork sausage
- 3 tablespoons butter
- 1/2 cup flour
- 4 ½ cups milk
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper
Biscuit Topping
- 2 (7.5 ounce) cans refrigerator biscuits or homemade drop biscuit dough (enough for about 12 biscuits)
Instructions
- Preheat and Prepare Pan: Heat oven to 350°F (175°C). Spray a 13 x 9 inch glass baking dish with cooking oil spray to prevent sticking.
- Cook Sausage: Brown the ground pork sausage in a medium-sized pot over medium heat until fully cooked and no longer pink. Transfer the cooked sausage to the prepared baking dish, using a paper towel to blot out excess grease.
- Make the Roux: Add butter to the sausage drippings remaining in the pot and melt over medium heat. Stir in the flour, salt, black pepper, and cayenne pepper to form a roux. Cook for 2-3 minutes, stirring constantly, until the roux begins to brown and develop a nutty aroma.
- Prepare the Gravy: Gradually whisk in the milk a little at a time to prevent lumps. Continue cooking over medium-low heat, stirring often, until the gravy thickens, which should take several minutes.
- Assemble Casserole: Pour the thickened gravy over the cooked sausage in the baking dish. Separate the biscuits and cut each into fourths (or break homemade biscuit dough into small pieces). Scatter the biscuit pieces evenly over the gravy.
- Bake: Bake the casserole in the preheated oven for 25 to 30 minutes, or until the biscuit pieces are golden brown and cooked through. Serve warm for a comforting meal.
Notes
- For best results, use whole milk or 2% milk to achieve a creamy gravy.
- Adjust cayenne pepper to your preferred spice level or omit if sensitive to heat.
- You can substitute pork sausage with turkey sausage for a leaner option.
- Refrigerator biscuits can be swapped with homemade biscuit dough for a fresher taste.
- This dish can be prepared ahead of time by assembling everything in the baking dish, covering with foil, and refrigerating overnight before baking.
