Blueberry Filling:

  • 1 cup Powdered sugar
  • 1/8 cup Water
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Lemon juice

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add butter: Grate or cut the cold (or frozen) butter into small pieces. Rub the butter into the dry ingredients until it resembles coarse crumbs.
  4. Fold in blueberries: Gently fold in the blueberries, being careful not to crush them.
  5. Combine dough: Pour in the cold milk and gently stir until the dough just comes together. Avoid overmixing.
  6. Shape and bake: Turn the dough out onto a floured surface, pat it out to 1-inch thickness, cut out biscuits, and place them on the baking sheet. Bake for 12-15 minutes until golden-brown.
  7. Make glaze: While the biscuits bake, whisk together powdered sugar, water, vanilla extract, and lemon juice in a bowl.
