Instructions
- Prepare Blueberry Compote: In a saucepan over medium heat, combine 3 cups blueberries, ½ cup granulated sugar, 2 tbsp cornstarch, 2 tbsp lemon juice, and ½ cup water. Cook stirring occasionally until the mixture thickens and becomes glossy, about 6 to 8 minutes. Remove from heat and allow to cool completely.
- Make Cheesecake Mousse: In a mixing bowl, beat 16 oz softened cream cheese with 1 cup powdered sugar and 2 tsp vanilla extract until smooth and creamy. In a separate bowl, whip 2 cups cold heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy, taking care not to deflate the whipped cream.
- Layer the Trifle: In a large trifle bowl or glass dish, start with a layer of cubed ladyfingers, pound cake, or sponge cake at the bottom. Spoon a layer of cheesecake mousse over the cake cubes, followed by a layer of the cooled blueberry compote. Repeat these layers until the bowl is filled, ending with the blueberry layer.
- Decorate: Top the trifle with extra whipped cream swirls, a generous sprinkle of crushed graham crackers or digestive biscuits, and garnish with fresh blueberries for a finishing touch.
