Ingredients
Scale
Protein and Seasoning
- 1 lb boneless, skinless chicken breast or thighs, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
Pasta and Broth
- 1 cup uncooked orzo
- 2 1/4 cups chicken broth
Cheese and Vegetables
- 1 (5.2 oz) package Boursin garlic & herb cheese
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 cup baby spinach
- 1/4 cup grated Parmesan cheese (optional)
Garnish
- Fresh basil or parsley, for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the perfect baking temperature for the dish.
- Cook Chicken: Heat olive oil in a large oven-safe skillet or baking dish over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned on all sides. Remove the chicken and set it aside to prevent overcooking.
- Toast Aromatics and Orzo: In the same pan, add the minced garlic and cook for 30 seconds until fragrant. Stir in the uncooked orzo and toast it for about 1 minute to bring out its nutty flavor.
- Add Broth and Vegetables: Pour in the chicken broth and bring the mixture to a simmer. Stir in the diced zucchini and halved cherry tomatoes. Nestle the Boursin garlic & herb cheese in the center of the pan to start melting into the sauce.
- Combine Chicken and Bake: Return the browned chicken pieces to the dish and gently mix slightly to combine. Cover the skillet or dish with foil and bake in the preheated oven for 20 minutes, allowing the orzo to cook and the flavors to meld.
- Add Spinach and Finish Baking: After 20 minutes, uncover the dish and stir in the baby spinach and grated Parmesan cheese if using. Bake uncovered for an additional 5 to 10 minutes until the orzo is tender and the dish is creamy and fully cooked.
- Garnish and Serve: Remove from oven, garnish with fresh basil or parsley, and serve hot for a deliciously bold and creamy dinner.
Notes
- Use chicken thighs for juicier meat or breasts for leaner protein.
- Fresh spinach can be substituted with kale or Swiss chard if preferred.
- Parmesan cheese is optional but adds a nice savory depth to the bake.
- Make sure to cover the dish with foil during the initial baking to retain moisture and create a creamy texture.
- This dish can be prepared in advance and baked just before serving for convenience.
