Ingredients
Scale
Caramelized Onion Aioli
- 2 tbsp olive oil
- 1/2 large yellow onion, finely diced
- 1 1/2 tsp brown sugar
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tsp apple cider vinegar
- 1/2 tsp garlic powder
- Kosher salt and freshly ground black pepper, to taste
Burgers
- 1 lb ground beef (80-85% lean)
- Kosher salt and freshly ground black pepper, to season
For Serving
- Roasted potatoes or French fries (homemade or frozen)
- Sliced tomatoes
- Romaine lettuce, chopped
Instructions
- Make the caramelized onion aioli: Heat olive oil in a skillet over medium heat until shimmering. Add the finely diced onion and a pinch of salt, cooking for 10 minutes while stirring occasionally to soften the onions. Stir in brown sugar and continue cooking for an additional 5 to 10 minutes until the onions turn a deep golden brown and develop a jammy consistency. Add a splash of water if onions start to burn or crisp.
- Mix the aioli: Transfer the caramelized onions to a bowl and combine with mayonnaise, plain Greek yogurt, apple cider vinegar, and garlic powder. Season the mixture with salt and freshly ground black pepper to taste and stir well.
- Prepare the burgers: Divide the ground beef into 5 to 6 equal portions and shape each into a patty. Season both sides of each patty generously with salt and pepper.
- Cook the patties: Wipe the skillet clean and heat it over medium-high. Sear each burger patty for 2 to 3 minutes per side or until cooked to your desired doneness.
- Assemble the burger bowls: Arrange chopped romaine lettuce in bowls, add sliced tomatoes, top with the cooked burger patties, and serve alongside roasted potatoes or fries. Spoon dollops of the caramelized onion aioli over the burgers and enjoy.
Notes
- If you prefer a milder aioli, reduce the amount of garlic powder to 1/4 tsp.
- To keep the caramelized onions from burning, add water as needed and stir frequently toward the end.
- Use homemade roasted potatoes for a fresher taste or opt for store-bought frozen fries for convenience.
- These burger bowls are a great low-carb alternative to traditional burgers with buns.
- Ground beef with 80-85% lean content provides a good balance of juiciness and flavor.
