Beef Mixture

  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced
  • 1/4 cup mayonnaise

Cheese and Bread

  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or additional sliced cheese)
  • 24 dinner rolls (or 2 packs of 12)

Topping

  • 2 Tbsp unsalted butter, melted (plus more for greasing baking sheet)
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350˚F. Grease the bottom of a rimmed baking sheet with melted butter to prevent sticking and add flavor.
  2. Cook Beef Mixture: Heat a large skillet over medium-high heat and add 1/2 tablespoon olive oil. Add the finely diced onion and cook briefly. Then add the 2 pounds of ground beef, breaking it up with a spatula. Season with salt, black pepper, and garlic powder. Cook until the beef is just done, breaking it up thoroughly. Remove the skillet from heat.
  3. Drain Excess Fat and Mix: Tilt the skillet to spoon off and discard any excess fat. Stir in 1/4 cup mayonnaise thoroughly into the cooked ground beef to add moisture and creaminess.
  4. Assemble Sliders: Cut the dinner rolls in half horizontally. Place the bottom halves on the buttered baking sheet. Line each bottom bun with a slice of cheddar cheese. Spread the beef mixture evenly over the cheese, using the back of a spatula to square and spread the meat to fit. Top the beef evenly with shredded cheddar cheese.
  5. Add Buns and Bake: Place the top halves of the buns, cut side down, on each slider. Brush the tops with 2 tablespoons of melted butter and immediately sprinkle sesame seeds evenly over them. Bake the assembled sliders at 350˚F for 12-15 minutes, or until the cheese is melted and the buns are golden brown on top.
