Instructions

  1. Cook Beef and Onion: In a large pot over medium-high heat, cook the ground beef and chopped onion until the beef is browned and the onion is softened. Drain the grease to avoid excess fat in the soup.
  2. Sauté Vegetables: Add the carrots and celery to the pot and cook for a few minutes until they begin to soften, stirring occasionally to combine flavors.
  3. Add Seasonings and Garlic: Stir in the minced garlic, salt, freshly ground pepper, dried parsley, and ground mustard. Cook for about one minute to release the aroma of the spices and garlic.
  4. Simmer with Broth and Potatoes: Pour in the beef broth and add the peeled, cubed potatoes. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover the pot and cook for 15 minutes or until the potatoes and carrots are tender when pierced with a fork.
