  • Author: lina
  • Total Time: 4 hours 40 minutes
  • Yield: 4 servings 1x

Description

This comforting Cheesy Chicken and Rice recipe combines tender shredded chicken, fluffy white rice, and a creamy cheesy sauce with mixed vegetables. Cooked effortlessly in a crockpot, it results in a hearty, flavorful one-pot meal perfect for easy weeknight dinners.

Ingredients

Scale

Protein and Rice

  • 4 boneless chicken breasts
  • 1 1/2 cups white rice (uncooked)

Soups and Broth

  • 1 packet onion soup mix
  • 1 can cream of mushroom soup
  • 2 cups chicken broth

Vegetables

  • 2 cups frozen mixed vegetables

Cheese and Seasoning

  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the crockpot: Spray your crockpot with cooking spray to prevent sticking and make cleanup easier.
  2. Layer rice and chicken: Place the uncooked white rice evenly at the bottom of the crockpot, then arrange the boneless chicken breasts on top of the rice.
  3. Make the soup mixture: In a separate bowl, combine the onion soup mix, cream of mushroom soup, and chicken broth. Mix well until smooth.
  4. Add soup mixture to crockpot: Pour the combined soup and broth mixture evenly over the chicken and rice layers.
  5. Cook on low: Cover and cook the mixture on the crockpot’s low setting for 4 to 5 hours, allowing the chicken to cook through and the rice to absorb the flavors.
  6. Shred the chicken: After cooking, shred the chicken directly in the crockpot using two forks to pull the meat apart, mixing it into the rice.
  7. Add vegetables and cheese: Stir in the frozen mixed vegetables and shredded cheddar cheese evenly throughout the crockpot contents.
  8. Final cooking: Continue to cook on low for another 30 minutes, or until the cheese has melted and the vegetables are heated through thoroughly.

Notes

  • You can substitute cream of mushroom soup with cream of chicken soup for a different flavor.
  • Use low-sodium chicken broth to reduce salt content if desired.
  • Frozen mixed vegetables can be replaced with fresh vegetables, just increase cooking time accordingly.
  • For a spicier version, add some paprika or cayenne pepper to the soup mixture.
  • Leftovers store well in the refrigerator for up to 3 days and reheat easily.
