A delightful twist on the classic Caesar salad, this Chicken Caesar Pasta Salad combines the flavors of a traditional Caesar salad with the heartiness of pasta and the savory goodness of bacon and chicken.

Pasta:
- 1 cup dry pasta (cooked according to package directions)
Bacon:
- 6 slices thick-cut bacon, cooked crisp and crumbled
- 1 tbsp bacon grease*
Chicken:
- 1 cup cooked rotisserie chicken, roughly chopped
Other Ingredients:
- 1/4 cup red onion, thinly sliced
- 1/2 cup shredded Parmesan cheese
- 2 cups chopped romaine or green leaf lettuce
- Salt & pepper, to taste
- 1/2 cup Caesar dressing, or more to taste
- 1 cup croutons (optional)
Instructions
- Cook Pasta: Cook pasta according to package directions. Drain, run under cold water to stop cooking, and set aside.
- Cook Bacon: Cook bacon until crisp, then crumble it. Reserve 1 tbsp of the grease/drippings.
- Combine Pasta and Bacon: Transfer cooled pasta to a bowl and toss with the reserved bacon drippings until evenly combined.
- Assemble Salad: Add in the cooked chicken, red onion, Parmesan cheese, romaine lettuce, salt, pepper, and Caesar dressing. Stir thoroughly until evenly combined.
- Adjust Dressing: Add more dressing if necessary, to taste, and toss everything again to coat evenly.
- Serve: Serve the Chicken Caesar Pasta Salad immediately.
