Instructions
- Crush the biscuits: Begin by crushing the cookies or biscuits into small pieces but not a powder—small chunks provide texture and simulate the look of meat in the salami.
- Melt chocolate and butter: Using a double boiler method, gently melt the dark chocolate and unsalted butter together until fully smooth and combined. This ensures a glossy and rich base for the salami.
- Combine ingredients: Remove the melted chocolate mixture from heat. Stir in the optional liquor or coffee if using, milk, vanilla extract, the crushed cookies, toasted pistachios, and a pinch of salt until everything is evenly mixed into a thick, moldable dough.
- Shape the logs: Place half of the mixture onto a sheet of plastic wrap and shape it into a log resembling a salami. Roll tightly in the plastic wrap, twisting the ends to seal. Roll the wrapped log back and forth to ensure an even round shape. Repeat this process with the remaining mixture.
- Chill to firm up: Place the shaped logs in the refrigerator for at least 2 to 3 hours to allow them to firm up and solidify properly.
- Coat and decorate: Once firm, remove the plastic wrap from the logs and dust them generously with powdered sugar on all sides or roll them in powdered sugar to mimic the white mold casing of a real salami. Brush off any excess sugar for a clean look.
