  2. Prep Vegetables and Cheese: While the chicken rests, slice the onion and mushrooms. Shred the Monterey Jack cheese and set aside.
  3. Preheat Oven and Sear Chicken: Preheat your oven to 375℉. Heat a pan over medium-high heat and add a mix of half a tablespoon olive oil and half a tablespoon butter. Sear the chicken breasts for approximately 3 minutes per side until golden brown and the internal temperature reaches 160℉.
