- 1/4 cup all-purpose flour
- 1/4 cup cilantro, chopped
- Salt and pepper to taste

- 2 tbsp coconut oil
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 cup coconut milk
- 2/3 cup chicken broth
- 1 tbsp brown sugar or coconut sugar
- 2 limes
- 1 green onion, chopped, for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Sear the chicken: Heat a large oven-safe skillet or dutch oven over medium heat. Add coconut oil and olive oil. Combine flour and cilantro, then coat each chicken breast in the mixture. Sear the chicken for 3-4 minutes per side until browned.
- Mix the sauce: While the chicken is searing, mix coconut milk, broth, sugar, and juice from 1 lime in a bowl.
- Bake: Remove skillet from heat, pour the coconut milk mixture over the chicken. Bake for 10-15 minutes until the chicken reaches 165°F.
- Finish and serve: Remove from the oven, drizzle lime juice over the chicken. Season with salt, pepper, extra cilantro, and green onions. Enjoy!
