Dip Ingredients
- 2 cups cottage cheese (4% small curd cottage cheese recommended)
- ½ avocado
- ⅓ cup fresh herbs (chives, flat leaf parsley, dill; extra for garnishing)
- 1 ½ tablespoons fresh lemon juice
- 1 ½ tablespoons extra virgin olive oil (good quality, plus extra for garnishing)
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- ¼ teaspoon garlic powder
Instructions
- Combine Ingredients in Food Processor: Place the cottage cheese, avocado, fresh herbs, lemon juice, and olive oil into a food processor.
- Blend Until Creamy: Blend the mixture for about 60 to 90 seconds until the dip is whipped and creamy in texture. Remove the blade afterwards.
- Season the Dip: Add salt, ground black pepper, and garlic powder to the blended mixture, then combine gently with a spoon to distribute the seasonings evenly.
- Serve and Garnish: Transfer the dip to a serving bowl and garnish with a drizzle of extra virgin olive oil and chopped fresh herbs. Serve immediately with fresh cut vegetables and crackers.
