Ingredients
Scale
Protein & Pasta
- 2 boneless, skinless chicken breasts, sliced into strips
- 8 oz fettuccine pasta
Vegetables
- 2 cups broccoli florets
- 3 cloves garlic, minced
Dairy & Fats
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 1/4 cups heavy cream
- 1 cup grated Parmesan cheese
Seasonings & Garnish
- 1/4 tsp salt
- 1/4 tsp black pepper
- Pinch of nutmeg (optional)
- Fresh parsley for garnish (optional)
Instructions
- Cook Pasta and Broccoli: Cook fettuccine according to package directions, adding the broccoli florets to the boiling water during the final 3 minutes of cooking. Drain both and set aside.
- Cook Chicken: Heat olive oil in a large skillet over medium heat. Season chicken strips with salt and pepper, then add to the skillet. Cook until golden brown and fully cooked, about 6 to 8 minutes. Remove chicken from skillet and set aside.
- Sauté Garlic: In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
- Make Alfredo Sauce: Pour in heavy cream and bring it to a gentle simmer. Stir in Parmesan cheese and a pinch of nutmeg if using. Continue cooking and stirring until the sauce thickens slightly, about 3 to 4 minutes.
- Combine Ingredients: Return the cooked chicken to the skillet along with the drained pasta and broccoli. Toss everything until evenly coated in the creamy Alfredo sauce.
- Serve: Serve immediately, garnished with fresh parsley if desired.
Notes
- You can replace broccoli with other vegetables like asparagus or spinach based on preference.
- For a lighter version, substitute half-and-half for heavy cream, but the sauce will be less rich.
- Grate fresh Parmesan cheese for best flavor and texture in the sauce.
- Be careful not to overcook garlic to avoid bitterness.
- This dish is best enjoyed immediately but can be reheated gently on the stovetop with a splash of cream or milk.
