Ingredients
Scale
Main Ingredients
- 4 oz cream cheese (or coconut butter for dairy-free)
- 2 tbsp butter (or extra coconut butter for plant-based)
- 3 tbsp powdered sugar (or erythritol for keto-friendly)
- Zest of one lemon (fresh for best flavor)
Coating (Optional)
- 3 oz white chocolate chips
- ½ tsp oil (such as coconut or vegetable oil, for smoother chocolate coating)
Additional Optional Ingredients
- A drop of natural yellow food coloring or a pinch of turmeric (for color enhancement)
Instructions
- Soften Ingredients: Bring the cream cheese and butter to room temperature until softened, making it easier to blend for a smooth texture.
- Mix Ingredients: Blend all main ingredients except the white chocolate using a hand mixer for the creamiest consistency. Alternatively, you can stir with a fork but it won’t be as smooth.
- Chill Mixture: Spread the mixture into a small container or place it in the freezer for a few minutes until firm enough to scoop.
- Form Truffles: Use a mini cookie scoop or tablespoon to form bite-sized balls and place them on a parchment-lined plate. Freeze until firm to hold shape.
- Melt Chocolate: If coating, melt the white chocolate chips in a microwave or double boiler, then stir in ½ teaspoon of oil for a smoother coating.
- Dip Truffles: Dip each truffle into the melted white chocolate, then place back on parchment paper to set.
- Cut Truffles: Once the chocolate has hardened, cut each truffle in half to create bite-sized treats perfect for snacking.
- Store Properly: Store the truffles in the refrigerator or freezer to maintain freshness and texture.
Notes
- Use full-fat cream cheese or coconut butter for the best creamy texture.
- Adjust sweetness by varying powdered sugar or erythritol amount to your preference.
- For a vibrant yellow color, add a drop of natural yellow food coloring or a small pinch of turmeric without altering the flavor.
- White chocolate coating is optional but adds a delicious contrast and elegant presentation.
- Store in an airtight container in the refrigerator for up to 1 week or freezer for up to 1 month.
