Instructions
- Sauté Vegetables: Heat olive oil in a Dutch oven over medium-high heat. Sauté onions, celery, and carrots until soft. Add garlic and cook for an additional minute.
- Add Flour and Stock: Sprinkle in flour, stir, then pour in one cup of chicken stock, stirring until smooth. Add remaining stock, Italian seasoning, salt, and pepper, stirring well.
- Cook Orzo and Turkey: Stir in turkey and orzo. Bring to a boil, then simmer for 10 minutes until orzo is tender, stirring occasionally.
- Finish Soup: Remove from heat. Stir in cream until blended. Add spinach and cook until wilted. Adjust seasoning and serve hot with a squeeze of lemon juice if desired.
