Instructions
- Preheat the oven: Preheat your oven to 400 degrees Fahrenheit and line a large baking pan with parchment paper. Depending on the amount of green beans, you might need two pans.
- Prep the beans: Trim both ends off the green beans by snapping them off with your hands or cutting with a knife. Place the trimmed beans into a large mixing bowl.
- Toss the ingredients: Add the avocado oil, minced garlic, shredded parmesan, salt, and black pepper to the green beans. Toss everything together until the beans are fully coated with the mixture.
- Roast the beans: Spread the green beans out in a single layer on the prepared baking pan. It’s okay if some beans slightly overlap. Roast in the oven for 15-20 minutes or until the beans are tender and have crispy edges.
- Serve: After roasting, optionally squeeze fresh lemon juice over the beans for brightness, then serve immediately as a flavorful side dish.
