Zucchini Fritters:

  • 4 medium zucchini
  • 1 tablespoon salt, divided
  • 4 scallions, thinly sliced
  • 2 large eggs, beaten
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 cup parmesan cheese, freshly grated
  • 2 tablespoons oil

Instructions

  1. Grate Zucchini: Finely grate the zucchini into a mixing bowl. Add half the salt and set aside for 10 minutes.
  2. Drain Zucchini: Squeeze out all the excess moisture from the zucchini.
  3. Mix Ingredients: Add the scallions, eggs, almond flour, baking powder, and parmesan cheese, and mix well.
  4. Fry Fritters: Add oil to a non-stick pan over medium heat. Spoon batter into the pan, pressing into discs. Fry for 2-3 minutes per side until golden and crispy.
  5. Drain and Serve: Place the zucchini fritters on a wire rack to drain excess oil before serving.
