Ingredients
Scale
Chicken and Sauce
- 2 pounds chicken breasts or thighs
- 6 cloves garlic, chopped
- 1/2 cup tamari or soy sauce
- 1/4 cup organic ketchup
- 3 tablespoons honey
- 2–3 tablespoons chili paste
- 1 tablespoon rice vinegar
- Black pepper, to taste
Vegetables and Garnishes
- 3 cups broccoli florets
- 1/2 cup fresh chopped herbs (scallions and/or cilantro)
- Toasted sesame seeds, for serving
- Rice, for serving
Instructions
- Prepare the ingredients: Chop the garlic and set aside. If using chicken breasts, you can trim excess fat. Rinse broccoli and cut into florets if not already done.
- Mix the sauce: In a medium bowl, whisk together tamari or soy sauce, organic ketchup, honey, chili paste, rice vinegar, and black pepper until well combined.
- Assemble in the crockpot: Place the chicken and chopped garlic into the slow cooker. Pour the prepared honey garlic sauce over the chicken. Add broccoli florets on top. Cover with the lid.
- Cook the chicken and broccoli: Cook on low for 3 to 4 hours or on high for 1 to 2 hours, until the chicken is cooked through and tender.
- Thicken the sauce: Remove the crockpot lid and increase the heat to high. Cook uncovered for 20 to 25 minutes, allowing the sauce to reduce and thicken to a glaze consistency.
- Serve the dish: Spoon the chicken and broccoli with the thickened sauce over bowls of cooked rice. Garnish with chopped fresh herbs and toasted sesame seeds for added flavor and texture. Enjoy warm.
Notes
- For a spicier dish, increase the chili paste quantity or add fresh chili slices.
- If using chicken thighs, skinless and boneless will cook more evenly in the crockpot.
- To speed up cooking, chicken can be browned quickly in a skillet before adding to the crockpot.
- Rice can be substituted with cauliflower rice for a low-carb option.
- Leftovers store well refrigerated for up to 3 days and reheat gently on the stovetop or microwave.
