Instructions

  1. Prepare the Sauce: In a small bowl, combine the toasted sesame oil, hoisin sauce, rice wine vinegar, low sodium soy sauce, lime juice, salt, and black pepper. Mix well and set aside to allow flavors to meld.
  2. Heat the Cooking Oil: Warm the vegetable or peanut oil in a medium to large non-stick skillet over medium heat, preparing to sauté the ingredients.
  3. Sauté the Mushrooms: Add the diced mushrooms to the heated skillet and cook over medium-high heat until they begin to soften, about 2-3 minutes. Remove them from the skillet and set aside for later use.
  4. Cook the Ground Chicken: In the same skillet, add a little more oil if needed and brown the ground chicken over medium heat. When the chicken is halfway cooked, stir in the minced onions, crushed red chili flakes, garlic, and grated ginger. Continue cooking until the chicken is fully cooked and aromatic.
  5. Combine Ingredients: Return the sautéed mushrooms to the skillet. Next, fold in the diced water chestnuts and pour in the prepared sauce. Stir everything together thoroughly, allowing the mixture to simmer for 1-2 minutes so all flavors marry.
  6. Prepare the Lettuce Wraps: Wash and pat dry the butter lettuce leaves. Spoon about 2 heaping tablespoons of the chicken mixture into each leaf. Lightly squeeze fresh lime juice on top of the filling to enhance brightness.
