Milk Bread:

- 2/3 cup whipping cream
- 2/3 cup warm milk
- 1 large egg
- 1/3 cup sugar
- 1 and 1/2 tsp salt
- 4 cups all-purpose flour (plus up to 5 tbsp extra)
Custard Filling:
- 4 egg yolks (lightly beaten)
- 1/3 cup all-purpose flour
- 1/2 cup sugar
- 1 ¼ cup milk
- 6 tbsp butter
- 1 tsp vanilla extract
- 2 tbsp melted butter
Instructions
- Proof the yeast: In the bowl of a stand mixer, combine warm water, yeast, and sugar. Let sit until foamy.
- Make the dough: Add warm milk, cream, remaining sugar, egg, and salt. Stir to combine. Attach dough hook.
- Knead: Add flour gradually, beating until dough is smooth and elastic.
- Prove: Let dough rise until doubled. Meanwhile, make custard filling.
- Shape: Divide and shape dough, fill with custard, and shape into balls.
- Arrange: Pipe remaining custard on buns, let rise until puffy.
- Bake: Preheat oven, bake buns until golden, brush with melted butter.
- Custard Filling: In a saucepan, cook flour, sugar, and milk until thick. Temper egg yolks, add to saucepan, cook until thickened. Stir in vanilla and butter. Cool.
