  • 4 cups all-purpose flour (plus up to 5 tbsp extra)

Custard Filling:

  • 4 egg yolks (lightly beaten)
  • 1/3 cup all-purpose flour
  • 1/2 cup sugar
  • 1 ¼ cup milk
  • 6 tbsp butter
  • 1 tsp vanilla extract
  • 2 tbsp melted butter

Instructions

  1. Proof the yeast: In the bowl of a stand mixer, combine warm water, yeast, and sugar. Let sit until foamy.
  2. Make the dough: Add warm milk, cream, remaining sugar, egg, and salt. Stir to combine. Attach dough hook.
  3. Knead: Add flour gradually, beating until dough is smooth and elastic.
  4. Prove: Let dough rise until doubled. Meanwhile, make custard filling.
  5. Shape: Divide and shape dough, fill with custard, and shape into balls.
  6. Arrange: Pipe remaining custard on buns, let rise until puffy.
  7. Bake: Preheat oven, bake buns until golden, brush with melted butter.
  8. Custard Filling: In a saucepan, cook flour, sugar, and milk until thick. Temper egg yolks, add to saucepan, cook until thickened. Stir in vanilla and butter. Cool.
