Cajun Seasoning:
- 2 tsp smoked paprika
- 1 tsp oregano
- 1 tsp thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- 1/4 tsp salt
Remaining Ingredients:
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 lb. boneless, skinless chicken breast
- 1 yellow onion, diced
- 1/2 lb. penne pasta (uncooked)
- 15 oz. fire roasted diced tomatoes
- 2 cups chicken broth
- 2 oz. cream cheese
- 3 green onions, sliced
Instructions
- Cajun Seasoning: Combine the ingredients for the Cajun seasoning in a small bowl. Cut the chicken into cubes, coat with the seasoning.
- Cook Chicken: Sear seasoned chicken in olive oil and butter.
- Add Onion: Sauté diced onion until softened.
- Add Pasta & Broth: Add pasta, tomatoes, and broth. Simmer until pasta is tender.
- Finish: Stir in cream cheese until melted. Top with green onions and serve.
Notes
- You can adjust the level of cayenne pepper to control the spiciness of the dish.
- Feel free to add more vegetables like bell peppers or spinach for extra nutrition.
