Pasta:
- 1 box (16 oz) rotini pasta
Dill Pickle Mix:
- 1/3 cup dill pickle juice (from the pickle jar)
- 2 cups chopped baby dill pickles
- 1 block (8 oz) Colby Jack cheese (cubed small)
- 1 small white onion (finely chopped)
Dressing:
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons chopped fresh dill (or 1 tablespoon dried dill)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Cook Pasta: Cook pasta according to package directions. Remember to salt the boiling water before adding the pasta. Rinse cooked pasta with cold water.
- Prepare Pickle Mix: Rinse pasta with 1/3 cup pickle juice. Chop pickles, cheese, and onion into small cubes.
- Combine Ingredients: Add pickles, cheese, and onion to pasta. Mix well.
- Make Dressing: Combine all dressing ingredients. Pour over the pasta mix and stir.
- Chill and Serve: Refrigerate for 1-2 hours before serving for best results.
