For the salad:

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 3 to 4 Romaine lettuce hearts (rinsed then chopped)
  • 1 cup black beans (rinsed)
  • 1 large tomato, chopped OR sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1 ½ cups nacho cheese Doritos (broke into bite-size pieces)
  • fresh cilantro (optional)

For the dressing:

  • 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing works well too)

Instructions

  1. Brown the beef: In a large skillet, brown and crumble the ground beef over medium-high heat. Drain any excess grease. Add the taco seasoning and water as instructed on the packet. Bring to a boil, then simmer for 10 minutes. Remove from heat and let it cool slightly.
  2. Prepare the salad: In a large bowl, combine the chopped lettuce, black beans, tomato, and cheddar cheese. Add the slightly cooled ground beef and gently toss to mix everything together.
  3. Assemble the salad: When ready to serve, add the Doritos chips and dressing to the salad. Toss everything together to coat evenly. Serve and enjoy!
