  • 1/4 cup kataifi dough

Kataifi Pistachio Bites

  • 2 tbsp pistachio butter
  • 1 tbsp toasted kataifi

Chocolate Layer

  • 1/3 cup dark or semi-sweet chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Prepare the Chia Pudding: In a glass bowl, stir together the chia seeds, pistachio milk, cardamom, sweetener, and toasted kataifi. Cover the bowl with a lid and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and create a pudding texture. If short on time, blend the chia seeds, pistachio milk, cardamom, and sweetener in a blender for 10-20 seconds, then fold in the toasted kataifi using a spatula.
  2. Toast the Kataifi: Melt butter in a pan over medium heat on the stovetop. Add kataifi dough and cook, stirring frequently with a spatula, until the kataifi is golden brown. Remove from heat and let cool.
  3. Make Kataifi Pistachio Bites: Combine pistachio butter with toasted kataifi, adjusting the quantities to form small bite-sized balls. These can be stored in an airtight container until assembling the pudding.
  4. Coat Kataifi Bites with Chocolate: Melt some chocolate in a microwave-safe bowl in 30-second intervals until smooth (approximately 30-50 seconds). Toss some of the kataifi pistachio bites in the melted chocolate to coat them fully, then set aside.
  5. Prepare the Chocolate Layer: Place the remaining chocolate and coconut oil in a microwave-safe bowl and melt together in 30-second intervals until smooth and lump-free, stirring well in between.
