Ingredients
Scale
Dry Ingredients
- 2 1/4 cups all purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 1 1/2 cups cold milk
- 1/4 cup melted butter (or canola oil)
- 1 teaspoon vanilla extract
- 2 eggs (beaten)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Create a well in the center of the mixture.
- Add Wet Ingredients: Pour the milk, melted butter, vanilla extract, and beaten eggs into the well of the dry ingredients. Whisk to combine and form a smooth batter. Add a splash more milk if the batter is too thick; it should have the consistency of white school glue.
- Preheat Waffle Maker: Preheat your Belgian waffle maker according to manufacturer instructions. Brush the plates generously with melted butter to prevent sticking.
- Cook Waffles: Pour about 1/2 cup of batter into the center of the waffle maker. Close and cook until the waffles are golden brown and crispy, following your machine’s timing guidelines. Repeat with remaining batter.
- Serve: Serve waffles warm topped with fresh berries, whipped cream, powdered sugar, maple syrup, and/or butter as desired.
- Traditional Method – Separate Eggs: Separate eggs, placing whites in one bowl and yolks in another.
- Whip Egg Whites: Using a stand mixer, whip the egg whites until stiff peaks form. Set aside.
- Combine Dry Ingredients: In a separate bowl, whisk flour, sugar, baking powder, baking soda, and salt. Create a well in the center.
- Add Wet Ingredients and Yolks: Pour in the milk, melted butter, vanilla extract, and egg yolks into the dry ingredients. Whisk until smooth batter forms.
- Fold in Egg Whites: Gently fold the whipped egg whites into the batter, preserving the airy texture for lighter waffles.
- Cook Using Waffle Maker: Preheat and butter the waffle iron, then pour approximately 1/2 cup of batter. Cook until golden and crisp. Repeat with remaining batter.
- Serve: Enjoy the waffles warm with your favorite toppings.
Notes
- For crispier waffles, make sure your waffle iron is properly preheated and well greased.
- If using melted butter, allow it to cool slightly before adding to avoid cooking the eggs.
- Adjust thickness of batter by adding a little more milk to get the desired pouring consistency.
- The traditional method with whipped egg whites makes waffles lighter and fluffier.
- Leftover waffles can be refrigerated and reheated in a toaster or oven for best texture.
- You can substitute canola oil for butter to make the recipe dairy-friendly.
