- 2–3 tablespoon water
- 1/4 cup spring onion (chopped, optional)
Instructions
- Cook Prawns: In a non-stick pan over medium heat, heat the oil and cook the prawns until they turn pink. This ensures they are properly cooked and flavorful. Once cooked, remove the prawns from the pan and set aside.
- Brown Onions: Increase the heat to high, add the finely chopped onions to the remaining oil in the pan, and cook until they turn slightly brown to develop a rich flavor. Push the browned onions to the side of the pan to prepare space for the eggs.
- Stir-fry Eggs: Crack the eggs directly into the pan, mix the yolks and whites together, and break them apart into small pieces using a spatula. Stir-fry until the eggs are fully cooked and lightly scrambled.
- Mix Rice and Veggies: Add the cooked rice, mixed vegetables, and soy sauce to the pan. Mix everything thoroughly to combine. Stir every 5-10 seconds to allow the rice to develop a light golden crust. Add one to two tablespoons of water as needed to keep the rice moist. Continue cooking for 5-10 minutes, adjusting time based on your stovetop temperature.
- Finish and Serve: Stir in the cooked prawns and chopped spring onions (if using) to combine all flavors. Turn off the heat and serve immediately while hot.
