Rice and Vegetables
- 3 cups cooked rice
- 1 cup chopped white onion (1 small onion)
- 1 cup frozen peas and carrots
Oils and Sauces
- 2 tablespoons sesame oil
- 2–3 tablespoons soy sauce (more or less to taste)
Eggs and Garnish
- 2 lightly beaten eggs
- 2 tablespoons chopped green onions (optional)
Instructions
- Saute Vegetables: Preheat a large skillet or wok over medium heat. Add 2 tablespoons of sesame oil, then add 1 cup chopped white onion and 1 cup frozen peas and carrots. Cook, stirring occasionally, until the vegetables are tender and fragrant.
- Scramble Eggs: Push the cooked vegetables to one side of the skillet. Pour the 2 lightly beaten eggs onto the other side. Use a spatula to scramble the eggs gently. When the eggs are fully cooked, mix them together with the sautéed vegetables in the skillet.
- Cook Rice Mixture: Add 3 cups of cooked rice into the skillet with the eggs and vegetable mixture. Pour 2-3 tablespoons of soy sauce evenly over the ingredients. Stir constantly to combine and heat everything through until the rice is warmed thoroughly and well coated with the soy sauce.
- Serve: Remove the skillet from heat. If desired, sprinkle 2 tablespoons of chopped green onions over the top as garnish. Serve the fried rice immediately while hot.
Notes
- Use day-old cooked rice for best texture to prevent sogginess.
- Adjust soy sauce according to your taste preference to control saltiness.
- Frozen peas and carrots can be substituted with fresh vegetables if available.
- The sesame oil adds a nutty flavor; use vegetable oil if unavailable but flavor will be different.
- Optional green onions add freshness and color but can be omitted.
