Rice and Vegetables

  • 3 cups cooked rice
  • 1 cup chopped white onion (1 small onion)
  • 1 cup frozen peas and carrots

Oils and Sauces

  • 2 tablespoons sesame oil
  • 23 tablespoons soy sauce (more or less to taste)

Eggs and Garnish

  • 2 lightly beaten eggs
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Saute Vegetables: Preheat a large skillet or wok over medium heat. Add 2 tablespoons of sesame oil, then add 1 cup chopped white onion and 1 cup frozen peas and carrots. Cook, stirring occasionally, until the vegetables are tender and fragrant.
  2. Scramble Eggs: Push the cooked vegetables to one side of the skillet. Pour the 2 lightly beaten eggs onto the other side. Use a spatula to scramble the eggs gently. When the eggs are fully cooked, mix them together with the sautéed vegetables in the skillet.
  3. Cook Rice Mixture: Add 3 cups of cooked rice into the skillet with the eggs and vegetable mixture. Pour 2-3 tablespoons of soy sauce evenly over the ingredients. Stir constantly to combine and heat everything through until the rice is warmed thoroughly and well coated with the soy sauce.
  4. Serve: Remove the skillet from heat. If desired, sprinkle 2 tablespoons of chopped green onions over the top as garnish. Serve the fried rice immediately while hot.

Notes

  • Use day-old cooked rice for best texture to prevent sogginess.
  • Adjust soy sauce according to your taste preference to control saltiness.
  • Frozen peas and carrots can be substituted with fresh vegetables if available.
  • The sesame oil adds a nutty flavor; use vegetable oil if unavailable but flavor will be different.
  • Optional green onions add freshness and color but can be omitted.
