Streusel Topping
- 6 Tbsp granulated sugar
- 6 Tbsp brown sugar
- 4 Tbsp all-purpose flour
- 1 tsp cinnamon
- 4–8 Tbsp vegetable oil
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C) and grease two 8×4-inch or 9×5-inch loaf pans thoroughly to prevent sticking.
- Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set this mixture aside for later use.
- Cream Oil and Sugar: Using a stand mixer fitted with a paddle attachment, combine the vegetable oil and granulated sugar on medium speed until well blended.
- Add Eggs: Lower the mixer to low speed and add the eggs one at a time, mixing just until combined after each addition to ensure an even mixture.
- Incorporate Pears and Vanilla: Add the chopped pears and vanilla extract to the mixture, mixing until everything is evenly incorporated.
- Add Dry Ingredients: With the mixer still on low, gradually add the previously whisked dry ingredients, mixing just until the batter is combined without overmixing.
- Divide Batter: Evenly divide the batter between the two prepared loaf pans, smoothing the tops gently with a spatula.
- Prepare Streusel: In a small bowl, combine the granulated sugar, brown sugar, flour, and cinnamon. Slowly add vegetable oil one tablespoon at a time, mixing with your fingers until the texture resembles wet sand. Sprinkle this streusel mixture evenly over the batter in both loaf pans.
- Bake: Place the pans in the preheated oven and bake for about 60 minutes, or until a toothpick inserted in the center of the loaves comes out clean.
- Cool and Serve: Remove the loaves from the oven and let them cool in the pans for about 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
