  • 48 Tbsp vegetable oil

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C) and grease two 8×4-inch or 9×5-inch loaf pans thoroughly to prevent sticking.
  2. Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set this mixture aside for later use.
  3. Cream Oil and Sugar: Using a stand mixer fitted with a paddle attachment, combine the vegetable oil and granulated sugar on medium speed until well blended.
  4. Add Eggs: Lower the mixer to low speed and add the eggs one at a time, mixing just until combined after each addition to ensure an even mixture.
  5. Incorporate Pears and Vanilla: Add the chopped pears and vanilla extract to the mixture, mixing until everything is evenly incorporated.
  6. Add Dry Ingredients: With the mixer still on low, gradually add the previously whisked dry ingredients, mixing just until the batter is combined without overmixing.
  7. Divide Batter: Evenly divide the batter between the two prepared loaf pans, smoothing the tops gently with a spatula.
