- 3 tsp Italian Seasoning

- 1/2 cup finely shredded carrots (optional)
- 1 cup milk
- 2 large eggs
- 2 tbsp butter, melted
- 1 cup Mozzarella, Italian or Pizza Blend Shredded Cheese, divided
- 1/2 cup pizza sauce
- 1/4 cup grated parmesan
Instructions
- Preheat the oven: Preheat the oven to 375°F. Line or spray a muffin tin.
- Mix dry ingredients: In a large bowl, whisk together the flour, Italian seasoning, garlic powder, baking powder, baking soda, salt, and shredded carrots.
- Add wet ingredients: Mix in the milk, eggs, butter, and 3/4 cup shredded cheese until just combined.
- Fill muffin tin: Spoon the batter into the muffin tin, filling 3/4 of the way to the top.
- Add toppings: Spoon 1/2-1 tbsp of pizza sauce on top of each muffin. Sprinkle the remaining cheese and parmesan on top.
- Bake: Place the muffin pan in the oven for 18-20 minutes or until golden. Let cool for 5 minutes before transferring to a cooling rack.
