Ingredients

Scale

Beef and Vegetables

  • 1/2 lb steak, sliced in long strips against the grain
  • 1/2 head broccoli florets, bite-size
  • 1/4 onion, medium sliced and layers separated

Noodles

  • 2 packets ramen noodles, spice packets removed

Sauce

  • 1/2 cup low sodium soy sauce
  • 1/3 cup honey
  • 1 tsp minced ginger
  • 2 tsp minced garlic
  • 3/4 cup beef broth

Thickener

  • 1 tbsp cornstarch
  • 1 tbsp water

Other

  • 1 tbsp oil (vegetable or canola oil preferred)
  • Sesame seeds (optional, for garnish)
  • Sesame oil (optional, for garnish)

Instructions

  1. Prepare the sauce: In a small bowl, combine the soy sauce, honey, minced ginger, minced garlic, and beef broth. Whisk together well and set aside to allow the flavors to meld.
  2. Make the cornstarch slurry: In a separate small bowl, mix the cornstarch and water until smooth. Set this mixture aside to be used later for thickening the sauce.
  3. Cook ramen noodles: Bring a small pot of water to boil and cook the ramen noodles according to the package instructions, but omit adding the spice packets. Drain and set noodles aside once cooked.
  4. Heat the skillet: Place a large frying pan or wok over medium-high heat and add the oil. Let it heat until shimmering but not smoking.
  5. Sauté the beef: Add the sliced beef to the hot pan. The oil should sizzle upon contact. Sauté the beef, stirring constantly, until it is halfway cooked and beginning to brown.
  6. Add onions: Add the sliced onions to the beef in the pan. Continue sautéing on high heat, stirring frequently, until the beef is fully cooked and onions start to soften and become translucent.
  7. Cook broccoli: Add broccoli florets to the pan and sauté until they turn bright green and are just tender but still crisp, ensuring not to overcook.
  8. Combine noodles: Add the cooked ramen noodles to the skillet. You can cut the noodles in half for easier handling or leave them whole. Stir to combine everything evenly.
  9. Add the sauce: Pour the prepared soy-honey sauce over the beef, broccoli, onions, and noodles. Stir thoroughly to coat all ingredients well with the sauce.
  10. Thicken the sauce: Slowly pour in the cornstarch slurry while stirring constantly to prevent lumps. Continue stirring until the sauce thickens and coats the noodles, beef, and vegetables evenly.
  11. Garnish and serve: Remove the skillet from heat. Optionally garnish with a sprinkle of sesame seeds and a light drizzle of sesame oil for added flavor and aroma. Serve hot immediately.

Notes

  • For a spicier version, add chili flakes or sriracha to the sauce.
  • You can substitute beef broth with chicken or vegetable broth if desired.
  • Use fresh ginger and garlic for best flavor but powdered forms can be used in a pinch.
  • Cutting the noodles before adding makes serving easier and less clumpy.
  • The dish is best served immediately to maintain noodle texture and sauce consistency.
  • Adjust honey quantity for sweeter or less sweet sauce to taste.
  • If you prefer gluten-free ramen, make sure to use gluten-free noodles and soy sauce.
