- 12 English muffins
- 12 slices cheddar cheese (or your favorite cheese)
Instructions
- Preheat the oven: Preheat the oven to 325 degrees. Grease a 9×13’’ pan.
- Prepare the egg mixture: Whisk together eggs, milk, salt, and pepper. Pour into the greased pan and bake for 18-22 minutes until set.
- Cool and cut: Allow the eggs to cool, then cut into 12 squares.
- Assemble sandwiches: Top English muffin halves with egg, cheese, meat, and the other muffin half.
- Immediate consumption: If eating right away, heat sandwiches at 350 degrees for 5 minutes or until cheese melts.
- Freezing instructions: Wrap each sandwich in foil or parchment paper, then freeze in a resealable bag for up to 1 month.
- Reheating: Thaw in the fridge overnight. Remove wrapping, microwave for 40 seconds to 1 minute on defrost, then 10-30 seconds on high power. Alternatively, reheat in the oven at 350 degrees for 10-15 minutes.
