  • 12 English muffins
  • 12 slices cheddar cheese (or your favorite cheese)

Instructions

  1. Preheat the oven: Preheat the oven to 325 degrees. Grease a 9×13’’ pan.
  2. Prepare the egg mixture: Whisk together eggs, milk, salt, and pepper. Pour into the greased pan and bake for 18-22 minutes until set.
  3. Cool and cut: Allow the eggs to cool, then cut into 12 squares.
  4. Assemble sandwiches: Top English muffin halves with egg, cheese, meat, and the other muffin half.
  5. Immediate consumption: If eating right away, heat sandwiches at 350 degrees for 5 minutes or until cheese melts.
  6. Freezing instructions: Wrap each sandwich in foil or parchment paper, then freeze in a resealable bag for up to 1 month.
