Ingredients
Scale
Roll Ups
- 1 lb thinly sliced roast beef (deli style or leftover)
- 1½ cups shredded mozzarella or provolone cheese
- 4 large flour tortillas
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
Au Jus
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Assemble roll ups: Lay each flour tortilla flat and evenly layer the thinly sliced roast beef and shredded cheese down the center of each tortilla.
- Roll tortillas: Roll the tortillas tightly from the center towards the edge, then place them seam-side down on the prepared baking sheet to keep them closed while baking.
- Season and butter: Brush the tops of the roll ups with melted butter and sprinkle with garlic powder, onion powder, and dried parsley to add flavor and help achieve a golden crust.
- Bake: Place the baking sheet in the oven and bake for 12 to 15 minutes, or until the tortillas turn golden brown and the cheese inside has melted.
- Prepare au jus: While the roll ups bake, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan. Simmer gently for 5 to 7 minutes to develop a rich dipping sauce.
- Serve: Remove the roll ups from the oven, slice them into manageable pieces if desired, and serve warm with the hot au jus on the side for dipping.
Notes
- For a crispy exterior, brush the roll ups thoroughly with butter before baking.
- The au jus can be adjusted with additional seasoning to taste.
- Leftover cooked roast beef works great as a time-saving option.
- Use either mozzarella or provolone cheese based on your preference for mild or slightly sharper flavors.
- These roll ups make a great appetizer or a hearty snack.
