Apple Fritters

  • 1 TBSP apple cider vinegar
  • 1 cup peeled and diced apple

  • 2 TBSP coconut milk

  • Pinch sea salt
  • ½ tsp pure vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine cassava flour, tapioca starch, baking soda, sea salt, cinnamon, and maple sugar. Stir well to evenly distribute all dry ingredients.
  2. Add Wet Ingredients: Create a well in the center of the dry mixture and pour in the maple syrup, carbonated water, and apple cider vinegar. Stir gently until the batter becomes smooth and well combined.
  3. Fold in Apples: Carefully fold the peeled and diced apples into the batter until they are evenly incorporated without overmixing.
  4. Heat Oil: Fill a pot or deep pan with a few inches of avocado oil, enough to fully submerge the fritters without touching the bottom. Heat the oil over medium to medium-high heat until hot and ready for frying.
  5. Portion Batter: Using a large cookie scoop, ice cream scoop, or large spoon, portion the batter into 7 or 8 equal-sized pieces. Slightly flatten each piece to help them cook evenly.
