Ingredients
Scale
Fruit
- 30 green or red grapes (washed and thoroughly dried)
Candy Syrup
- 2 cups granulated sugar
- ½ cup water
- ¼ cup light corn syrup
Coloring
- White gel food coloring
- Pink gel food coloring
- Blue gel food coloring
Instructions
- Prepare Grapes: Insert toothpicks or small skewers into each grape and set aside to facilitate dipping.
- Combine Ingredients: In a medium saucepan, combine sugar, water, and corn syrup. Stir gently just to mix, avoiding stirring after heating begins.
- Heat Syrup: Place the saucepan over medium-high heat and bring the mixture to a boil without stirring, allowing it to heat for 10–15 minutes until it reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from Heat and Color: Once the syrup hits 300°F, remove from heat immediately. Add white gel food coloring thoroughly to the syrup.
- Add Additional Colors: Carefully dot pink and blue gel food coloring onto the surface of the syrup without mixing fully.
- Marble the Colors: Gently swirl the pink and blue colors into the syrup with a skewer or toothpick just enough to create a marbled effect.
- Dip Grapes: Dip each grape into the marbled candy syrup, turning gently to evenly coat with the candy shell.
- Cool and Harden: Allow excess syrup to drip off and place coated grapes on a parchment-lined tray. Let them cool and harden completely for about 10–15 minutes.
- Storage Preparation: Once hardened, place the candy grapes in an airtight container separated by layers of parchment paper to prevent sticking.
- Store: Keep the container in a cool, dry place at room temperature, consuming within 2 days for best texture and flavor.
Notes
- Ensure grapes are thoroughly dried to help the candy coating adhere properly.
- Use a candy thermometer for precise sugar syrup temperature to achieve the perfect hard candy shell.
- Do not stir syrup while boiling to prevent crystallization.
- Work quickly when adding colors as the syrup hardens fast once off heat.
- Consume within 2 days as moisture from grapes may soften the candy shell over time.
