  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 180 ml (3/4 cup) strong chicken stock
  • 180 ml (3/4 cup) double (heavy) cream
  • 1 tbsp lemon juice
  • 50 g (1/2 cup) finely grated parmesan cheese
  • Small bunch of fresh parsley, finely chopped

For Serving:

  • 300 g (10.5 oz) linguine
  • Additional black pepper and grated parmesan for topping

Instructions

  1. Cook the Pasta: Cook the linguine according to package instructions, reserving 1 cup of pasta cooking water.
  2. Prepare the Chicken: Coat chicken with cornflour, salt, pepper, and garlic powder. Fry in oil until golden and cooked through.
  3. Sauté Onions and Garlic: Sauté onion, garlic, salt, and pepper until fragrant.
  4. Create the Sauce: Add stock and cream to the pan, simmer, then stir in lemon juice.
  5. Combine Ingredients: Add cooked pasta to the sauce, sprinkle with parmesan, and mix well.
  6. Finish the Dish: Add chicken back to the pan, heat through, then garnish with parsley, black pepper, and parmesan before serving.
